Chestnut Honey In its pure form, chestnut honey is very dark – almost black, with a strong, pungent aroma and a bitter taste. It is predominantly collected in the forested areas of western Georgia, often alongside linden honey. It crystallizes very slowly in its pure form, and when blended, its proportion should not exceed 10%.
For the western regions, chestnut is the main source of abundant nectar. It begins to bloom mainly in June. Flowering lasts 12-14 days: the lifespan of one flower is 2 days. Honey derived from chestnut nectar is dark brown, with a characteristic bitter taste. It is characterized by high medicinal properties. One hectare of pure chestnut plantation yields up to 100-250 kg of honey.
