Acacia Honey
Acacia honey is often referred to as May honey because it is harvested during the acacia blooming period (April-May) and after the bees’ first nectar flow. The honey collection typically lasts from late May to mid-June.
In Guria, acacia is one of the primary nectar-producing plants, providing an abundant source of nectar in this region. As a result, the composition of May honey in spring is predominantly derived from acacia nectar. During this period, bees also collect nectar from mandarin (citrus), meadow flowers, fruit blossoms, and other nectar-producing plants.
Acacia honey is light in color and has a natural tendency to crystallize.
